From the Big Green Egg DVD (the DVD you get with each BGE purchase)

  • Flour tortillas
  • Shredded Jack or Cheddar cheese
  • Diced ham
  • Sliced jalapeño peppers (fresh or canned)
  • Sliced banana peppers (fresh or pickled)
  • Big Green Egg Seasoning
  • Corn meal

For each quesadilla you will use two flour tortillas.  Place on flat surface and cover with layers of cheese, ham, jalapeño peppers (remove seeds from peppers if milder flavor is desired) and banana peppers.  Sprinkle with Big Green Egg Seasoning.  Top with second tortilla.

Set plate setter with legs down in grill.  Heat grill to 550°F.  Place a baking stone on top of the plate setter; sprinkle with cornmeal to prevent the tortilla from sticking to the stone.  Place the prepared tortilla on the baking stone; close lid.  Cook for 3-1/2 minutes; open lid.  Using wide spatula, turn tortilla over.  Close lid; continue cooking for 3-1/2 minutes.  Remove and serve hot.

Note:  Using 10-inch tortillas, each quesadilla should serve about four people as an appetizer or one person as a light meal.
