Big Green Egg Smoked Chicken BreastThis was a busy cooking weekend! After I pulled the jerky off the grill, on went the turkey meatloafs (BGE #1) and then some chicken breasts went on BGE #2. I had marinated the breasts for 6 hours (while the jerky was cooking) and decided to go ahead and cook them off using the same set up as the jerky since it was already in place.

Marinade:

  • 1/3 cup water
  • 2 Tbsps white vinegar
  • 2 tbsps olive oil
  • 1 packet of italian dressing mix (dry)

BGE Setup

  • Plate setter – legs up
  • Grill

That’s it – I just slapped these on the grill at 200 degrees and let them smoke for 2 hours – turning once in the middle. They came out amazing and will make great dinners for this week – if they last that long! We ate the first breast over some baby spinach w/ranch dressing for dinner Saturday night – healthy eating isn’t terrible when you’ve got two Big Green Eggs!
